Position: Chef de Partie (CDP) - Senior Production Chef


Reports To: Head Chef / Executive Manager (temporarily Supervisor until Head Chef is appointed)


Location: HQ (Surulere) with assignment support to Kakawa & Parkview branches


Role Type: Full-Time, On-Site


Hours: Early morning shifts required (operations begin at 5 AM)

Expressions: Operating through company's To-Go, company's Gourmet, and 3x4 Presents to deliver authentic flavour via quick service, premium catering, and curated experiences.


Operations: The company operates across multiple kitchen locations, relying on structure, excellence, and teamwork.


Role Overview

Core Function: Responsible for supporting daily food production, prepping, cooking, quality control, kitchen organisation, and service execution.


Scope: Covers To-Go (delivery), Gourmet (events/catering), Corporate meal plans, and the After Dark menu.


Career Path: The role starts on a probationary basis with the opportunity for promotion to Head Chef based on performance, leadership, and operational understanding.

Key Responsibilities

Food Production & Cooking

Execute recipes and prep according to SOPs and portioning charts.

Prepare sauces, proteins, bowls, wraps, fried items, rice dishes, sides, canapés, fillings, and garnishes

Maintain consistent taste, colour, texture, and visual presentation.

Work cleanly, efficiently, and within set timelines.

Prepare bulk items for distribution to Kakawa & Parkview.


2. Prep List Execution

Create daily prep lists and share them with management or the senior chef.

Plan daily workflow and coordinate with kitchen assistants.

Ensure all mise-en-place is ready before service.

Label, portion, and store food correctly (FIFO/FEFO compliance).


3. Quality Control

Conduct tasting checks on all major components.

Maintain consistency across batches and days.

Flag irregularities in flavour, texture, colour, or aroma.

Ensure food is packaged and dispatched at the correct temperature.


4. Kitchen Organisation & Hygiene

Maintain a clean workstation at all times ("clean as you go").

Ensure all food safety and sanitation rules are followed.

Support deep cleaning, equipment care, and waste management.


5. Multi-Location Support

Train Kakawa and Parkview kitchen assistants in assembly, portioning, handling sauces/proteins, and finishing dishes correctly.

Ensure they understand the 3x4 "way" of cooking and presentation.


6. Documentation & Reporting

Record prep quantities, yields, and wastage.

Report shortages, damaged items, or issues to the Procurement and Inventory Officer.

Provide feedback on recipe improvements, workflow bottlenecks, and team performance.


7. Collaboration & Leadership Potential

Work collaboratively with other chefs to organise production.

Demonstrate initiative, problem-solving, reliability, and time management.

Support junior staff and kitchen assistants, showing the ability to step into leadership when required.
