Job descriptions & requirements
Responsibilities:
- Supervise and coordinate the daily activities of the production/kitchen team.
- Plan daily production based on expected sales and customer demand.
- Ensure food is prepared according to approved recipes, portions, and quality standards.
- Monitor the quality, taste, presentation, and freshness of all food products.
- Ensure proper food handling, hygiene, sanitation, and safety procedures are followed.
- Monitor the use of raw materials and reduce unnecessary food wastage.
- Work closely with the Purchasing/Store department to ensure adequate availability of ingredients.
- Monitor stock levels and report shortages or damaged/expired items.
- Ensure proper storage and handling of food ingredients.
- Control production costs and ensure proper portion control.
- Prepare and maintain daily production records and reports.
- Train, supervise, and evaluate production staff.
- Prepare staff duty schedules and ensure adequate manpower during production periods.
- Ensure that kitchen equipment and facilities are properly used and maintained.
- Identify production problems and take prompt corrective action.
- Ensure orders from the sales team are produced and delivered on time.
- Maintain compliance with company policies and relevant food safety/regulatory requirements.
- Work with management to introduce new products and improve existing recipes and production processes.
Requirements:
- A minimum of 4 years of experience
- A minimum of an HND in a related field
