Production Audit

Responsibilities:

• Record all food items prepared by the kitchen daily.
• Document the quantity of meals produced, including starters, main courses, sides, and special orders.
• Record the quantity of food items transferred from the kitchen to the service area.
• Monitor food production against customer orders.
• Record returned meals, cancelled orders, and complimentary meals.
• Monitor food wastage, spoilage, and rejected meals.
• Ensure every food item produced is properly documented.
• Record all drinks prepared or served by the bar.
• Monitor the quantity of alcoholic and non-alcoholic beverages issued from stock.
• Record opened bottles, shots served, cocktails prepared, and other beverage sales.
• Monitor complimentary drinks, staff consumption, and promotional drinks.
• Record broken, damaged, or wasted bottles.
• Verify beverage consumption against sales records and stock balances.
• Identify discrepancies between drinks issued, drinks sold, and remaining stock.
• Maintain accurate daily production registers.
• Prepare daily kitchen and bar production reports.
• Submit daily records of food and drinks produced, sold, wasted, and remaining.
• Prepare discrepancy reports for management.
• Maintain records of complimentary items, cancelled orders, and staff consumption.
• Submit weekly production and stock accountability reports.
• Ensure all production records are properly signed and authorised.

Requirements:

• A minimum of 3 years of experience
  
• A minimum of an OND in a related field
