Job Summary
The Head of Business, Restaurant is a senior executive role responsible for the overall commercial performance, strategic expansion, and operational excellence of Bukka Hut's entire restaurant network. This leader will carry full Profit and Loss (P&L) accountability for all outlets, ensuring profitability, consistency in brand standards efficiency.

Job Description/Requirements
Responsibilities:
- Own, manage, and drive the overall P&L for the entire restaurant business unit.
- Develop and execute annual operating plans, budgets, and forecasts to achieve revenue and profitability targets (EBITDA).
- Identify and implement innovative strategies for sales growth, maximizing average transaction value and customer traffic across all outlets.
- Oversee and enforce stringent cost management across key areas: food cost, labor cost, utilities, and general operating expenses.
- Drive efficiencies without compromising quality.
- Implement robust performance management systems (dashboards, KPIs) to monitor outlet performance in real-time, proactively identifying underperforming areas and executing turnaround plans.
- Establish and strictly enforce global best practices for food quality, preparation consistency, service speed, and presentation across the entire network.
- Ensure 100% adherence to all regulatory standards, including health, safety, hygiene (HSE), and licensing requirements, proactively mitigating operational risks.
- Oversee inventory integrity and control, collaborating closely with the Supply Chain and Central Kitchen teams to optimize product flow, minimize waste/shrinkage, and ensure accurate stock reconciliation.
- Champion the effective use of technology (POS, inventory management systems, digital ordering platforms) to enhance operational efficiency and improve the customer experience.
- Develop the long-term strategic plan for the restaurant network, including market entry strategies, competitive analysis, and new product launch readiness.
- Collaborate with the Executive and Projects teams to ensure the successful, timely, and cost-effective commissioning and launch of new outlets.
- Lead, mentor, and develop the next generation of leadership, including Outlet Managers, instilling a culture of Ownership Mentality, integrity, and customer-centricity.
- Analyze customer feedback data and implement strategic initiatives to continuously elevate the dining and ordering experience, driving loyalty and positive reviews.
Requirements:
- Minimum BSc
- 10 years of previous work experience in similar role
