Responsibilities:
Baking Operations & Quality Control
- Execute daily baking production according to Cinnamona’s approved recipes, standards, and timelines.
- Ensure consistency in taste, texture, portion size, and appearance across all baked goods.
- Monitor oven performance, baking temperatures, and timing to maintain optimal results and reduce waste.
Leadership & Shift Oversight
- Lead kitchen operations during assigned shifts, ensuring smooth workflow and adherence to standards.
- Supervise, guide, and support Assistant Bakers during shared shifts, providing clear instructions and quality checks.
- Take full responsibility for production quality during shifts where you are the most senior kitchen staff present
Ingredient Management & Precision
- Oversee accurate measurement, preparation, and handling of ingredients.
- Ensure proper storage, freshness, and usage of all raw materials.
Attention to Detail & Process Discipline
- Conduct visual, sensory, and procedural checks at every stage of production to catch inconsistencies early.
- Maintain strict adherence to portion control, presentation guidelines, and finishing standards.
Kitchen Organization & Hygiene
- Enforce cleanliness, order, and food safety standards across the kitchen.
- Ensure compliance with hygiene practices and food handling regulations at all times.
Inventory & Waste Control
- Support inventory tracking and stock planning to avoid shortages or unnecessary waste.
- Identify opportunities to improve efficiency while maintaining product integrity.
Team Development & Standards Transfer
- Train, guide, and mentor Assistant Bakers on Cinnamona’s recipes, portioning standards, hygiene practices, and calm kitchen culture.
- Coach junior team members through hands-on demonstrations, feedback, and quality checks during live production.
- Correct errors constructively and reinforce best practices to maintain consistency across all shifts.
- Support onboarding and skill development of new kitchen hires.
Requirements:
- Bachelor’s degree in Food & Nutrition, Food Science, or a related discipline (required)
- Minimum of 2 years of experience in a professional bakery or pastry kitchen
- Proven experience leading or supervising baking operations is an added advantage
- Valid Food Handler Certificate (required or strong advantage)
- Strong numeracy skills for recipe scaling, batch control, and yield management
- Ability to work rotating shifts and commute reliably to Asokoro, Abuja
- Highly Detail-Oriented: You notice and correct small inconsistencies in measurements, baking outcomes, timing, and presentation.
- Technically Skilled: Confident in core baking techniques and able to troubleshoot production issues calmly.
- Dependable & Accountable: Comfortable taking ownership of production quality during independent shifts.
- Calm Under Pressure: You maintain composure, structure, and order in a fast-paced kitchen environment.
