Job summary

The bakery manager is responsible for overseeing the day-to-day operations of the bakery, ensuring efficient production, high product quality, profitability, regulatory compliance, and exceptional customer satisfaction. The role involves managing staff, coordinating production activities, controlling inventory, maintaining food safety standards, and driving business growth while ensuring operational excellence.

Job descriptions & requirements

Responsibilities:

Operations Management:

  • Oversee daily bakery operations to ensure smooth and efficient workflow.
  • Develop and implement production schedules to meet customer demand and business targets.
  • Ensure timely production and distribution of bakery products.
  • Monitor product quality, consistency, and presentation standards.
  • Establish and enforce Standard Operating Procedures (SOPs) across all bakery functions.
  • Ensure all bakery equipment is properly maintained and operational.

Production Management:
  • Plan and coordinate daily, weekly, and monthly production activities.
  • Monitor production processes to ensure adherence to approved recipes and quality standards.
  • Optimize production efficiency and capacity utilization.
  • Minimize production waste, losses, and downtime.
  • Implement continuous improvement initiatives to enhance productivity.

Team Leadership & People Management:
  • Supervise and coordinate the activities of bakers, mixers, packers, drivers, cleaners, and sales personnel.
  • Prepare staff schedules, duty rosters, and shift plans.
  • Conduct employee onboarding, training, coaching, and performance evaluations.
  • Foster a productive, safe, and positive work environment.
  • Enforce company policies, workplace discipline, and safety procedures.
  • Support recruitment, promotion, and disciplinary processes as required.

Inventory & Procurement Management:
  • Monitor stock levels of raw materials, packaging supplies, and finished goods.
  • Approve inventory requests and coordinate procurement activities.
  • Conduct regular inventory counts and stock reconciliations.
  • Prevent stock shortages, overstocking, and inventory losses.
  • Ensure proper storage and handling of raw materials and finished products in line with food safety standards.

Financial & Cost Control Management:
  • Monitor operational costs, production expenses, and overall profitability.
  • Implement cost-control measures to reduce waste and improve margins.
  • Ensure proper cash handling and financial accountability
  • Prepare and submit weekly and monthly operational reports.
  • Collaborate with the accountant to develop budgets and achieve financial targets.


Sales & Customer Relationship Management:
  • Monitor customer satisfaction levels and address customer concerns promptly.
  • Develop and implement strategies to increase sales, customer retention, and market share.
  • Build and maintain strong relationships with distributors, supermarkets, hotels, restaurants, and other key customers.
  • Analyze customer feedback and market trends to support business growth initiatives.

Quality Assurance & Regulatory Compliance:
  • Ensure strict compliance with food safety, hygiene, and sanitation standards.
  • Maintain compliance with all relevant Nigerian regulatory requirements and industry standards.
  • Coordinate internal and external inspections, audits, and regulatory assessments.
  • Implement and monitor quality control procedures to maintain product excellence.
  • Ensure staff adherence to health, safety, and food handling regulations.

Requirements:
  • A minimum of a Higher National Diploma (HND) in business administration, food science, production management, operations management, or a related field.
  • Professional certification in bakery production, food safety, operations management, or a related discipline is an added advantage.
  • Minimum of five (5) years' experience in bakery operations, manufacturing, or food production, with at least two (2) years in a managerial or supervisory capacity.
  • Strong leadership, team management, and supervisory skills.
  • Production planning, scheduling, and process optimization.
  • Inventory control and warehouse management.
  • Financial management, budgeting, and cost-control skills.
  • Excellent communication, interpersonal, and stakeholder management abilities.
  • Strong analytical, problem-solving, and decision-making skills.
  • Knowledge of food safety regulations, quality assurance, and hygiene standards.
  • Proficiency in Microsoft Office Suite, particularly Excel, and reporting tools.
  • Ability to work under pressure and meet production deadlines.

Working Conditions:
  • Full-time position.
  • May require working weekends, public holidays, and early morning shifts based on production demands.
  • Work environment includes bakery production facilities, storage areas, and administrative offices.
